Penfolds Bin 707 Cabernet Sauvignon
Saturated with luscious flavours of dark berries, plums and cassis, this super (but not over) ripe cabernet is handsomely oaked and impressively supported by firm, almost raw-edged and chalky tannin. A violet-like perfume lifts its aroma, while its spectrum of fruit encompasses nuances of prunes, currants and dark olives as well as undertones of dried herbs.

Rosemount Estate Balmoral Syrah, Mclaren Vale
This wine is the produce of 50-100 year old McLaren Vale vines. On the nose, behind plum fruit, notes of spice and pepper are followed by cassis and licorice. The palate is rich with plum, cassis and spice. The divine fruit is balanced by natural acidity in this well-rounded wine.

Penfolds St Henri Shiraz
The deep ruby St. Henri is nearly opaque. Leather and smoky Asian spice fill the nose, with blackberry jam, blackcurrant jam, black pepper, a floral element, and some alcoholic heat (the big wine is an unsurprising 14.5% abv). The palate adds a bacon meatiness, stewed fruit, raspberry, pomegranate, and chocolate, with touches of dried herb.

Rosemount Estate Mountain Blue Shiraz Cabernet, Mudgee
An 85% Shiraz, 15% Cabernet Sauvignon blend from Mudgee in New South Wales. On the nose, cassis and soft black fruits blend with plum and ginger spice. The palate displays intense fruit and a firm tannin backbone, with blackberry and spicy plum dominating.

Lindemans Pyrus Cabernet Sauvignon Merlot
This blend from the “Terra Rossa” strip includes grapes from the oldest planting in the Coonawarra district. The nose is a glorious blend of red berries followed by ripe black fruit notes, cloves, juniper, cedar and oak. The palate is rich, with sweet berries and licorice, chocolate and cinnamon.

Lindemans St. George Cabernet Sauvignon, Coonawarra
Made from 30-year-old vines of the St George vineyard. The nose is heaped with ripe, red and black fruits, backed up by tobacco, mint and smoky wood aromas. The palate further develops the fruit flavors, along with spice and cedar wood notes, leading to a full, long-lasting finish.

Sir James Sparkling Shiraz
Produced in only limited qualities this Sparkling Shiraz is created from a blend of vintages combining rich fruit with soft, complex characters. The wine displays ripe, berry fruit flavours and mellow oak with yeast complexity showing the benefits of extended bottle maturation. An excellent example of this uniquely Australian wine style.
