Sir James Sparkling Shiraz
Produced in only limited qualities this Sparkling Shiraz is created from a blend of vintages combining rich fruit with soft, complex characters. The wine displays ripe, berry fruit flavours and mellow oak with yeast complexity showing the benefits of extended bottle maturation. An excellent example of this uniquely Australian wine style.

Robert Mondavi Napa Range Chardonnay
On the nose, ripe apples and apricots mingle with floral hints and touches of cinnamon and vanilla. The palate is full, fruity and long-lasting, with plenty of character brought to the fore by the 6½ months of barrel aging.
Variety: Chardonnay
Vintage: 2005 - 2006
Piper Hiedsieck Cuvee Brut Champagne
Vintage: NV
Origin: France
Gérard Bertrand, Cigalus Rouge
Intense ruby colour with a mahogany hue. First the bouquet shouts concentrated, very ripe black fruit. After awhile, more complexity with grilled spice and toasted oak unfolds. The palate is lush and opulent with velvety tannins. The aromas of black fruit - blackberries, black cherries and plums - reappear with a complex empyreumatic web leading into mint. The finish is long with a perfect balance. Aged in French oak barrels for 12 months, the wine is unfiltered, and further bottled prior to release. To be opened one or two hours before serving at 16°C.
Varieties: Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Grenache and Carignan
Gérard Bertrand, Cigalus Blanc
Bright yellow with pale green reflections. Bouquet with a lot of white flowers, citrus fruits combined with white fruits (peach, apricot, grapefruit) and honey. The palate is lush, opulent and smooth and at the same time very fresh. There are some hints of subtle vanilla, light toasty oak taste and very aromatic tropical fruits. The long, pleasant finish is lively and fresh.
Varieties: Chardonnay 80%, Viognier 15%, Sauvignon 5%
Hardys Vintage Port Shiraz
100% McLaren Vale Shiraz. A beautifully smooth, rich-flavored port with notes of plum jam, raisins and dates.
Variety: Shiraz
Vintage: 1997
Cesari Amarone della Valpolicella Classico DOC
This is a very fruit-driven wine, because of its aging in stainless steel, rather than oak. Young, light and low in alcohol, this wine is a very good choice for lunchtime drinking.
Vintage: 2005
Whiskers Tawny Port
A smooth, mellow 8-year-old tawny Port with classic rancio characters, dried fruit flavors and a dry finish.
Variety: Port
Penfolds Bin 407 Cabernet Sauvignon
Blackcurrants and black olives dominate the nose, with a touch of cassis. The palate brings red currants, olives and chocolate. A luscious mouth-feel with rich tannins cries out to accompany the finest meat dishes.
Variety: Cabernet Sauvignon
Vintage: 2005
Gérard Bertrand, Hospitalitas
Garnet-red coloured. Intense bouquet dominated by aromas of spice, fruit (blackberry, blackcurrant) and hints of vanilla. On the palate, the wine expresses the quintessence of the Hospitalet terroir: powerful and elegant.
Unctuous, full-bodied and fleshy, it has a long finish of fruit and torrefaction. The blending of these three grape varieties produces a perfect harmony - aromatic expression, muscle and ageing capacity.
Varieties: Syrah 50%, Mourvèdre 40%, Grenache 10%
